3 Campfire Recipes To Make Right Now

As the leaves are starting to change from greens to reds, that can only mean one thing [aside from football season] – campfire season! Lauren here from the LIY Team! I can be found sipping wine around the campfire on any given Saturday night this time of year, and while we’re sipping we’re snacking too – ideally something made over the fire! I’m sharing 3 of our most frequently made campfire recipes today, perfect for whether your fire setup is happening in the backyard or at the campsite! For most of our campfire recipes, I use these individual aluminum foil round pans as they cook quickly and evenly, and are great for pre-camping trip prep! However, if you’re cooking for a larger group you could cook them i n one large pan, just know it will most likely take longer!

Campfire Chicken Fajitas

Campfire Chicken Fajitas

Prep Time 20 minutes
Cook Time 20 minutes

Ingredients

  • 1 lb Chicken Tenders, sliced lengthwise into strips
  • 1 Yellow Onion, peeled and sliced
  • 1 Red Bell Pepper, seeded and sliced
  • 1 Poblano Pepper, seeded and sliced
  • 1/4c cup Olive Oil
  • 1 Tbsp Chili Powder
  • 1/2 Tbsp Paprika
  • 1 tsp Sugar
  • 1 tsp Cornstarch
  • 1/2 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Ground Cumin
  • 1/4 tsp Black Pepper
  • 1/8 tsp Cayenne Pepper
  • 1/2 tsp Kosher Salt
  • Flour tortillas, sour cream, guac, salsa, etc for serving

Instructions

  • To a large mixing bowl, add chicken, onion, both peppers and olive oil.  Toss together to coat.  Add all seasoning ingredients and toss to coat well.
  • Divide mixture among prepared foil tins
  • Place over fire and heat about 15-20 minutes, until chicken is cooked through.

Campfire Mac N Cheese

Campfire Mac And Cheese

Prep Time 20 minutes
Cook Time 15 minutes

Ingredients

  • 7 oz Package Elbow Macaroni
  • 1 cup Grated Sharp Cheddar Cheese
  • 1 cup Grated Parmesan Cheese
  • 1/2 cup Gouda cheese
  • 1/3 cup Cream
  • 3 Tbsp Cold Butter Cubed
  • Salt and Pepper to taste

Instructions

  • Cook pasta according to package directions. Drain.
  • Stir your cream into your pasta.
  • Add the cheese and butter cubes.
  • Stir in salt and pepper to taste.
  • Spray your foil pans with nonstick cooking spray.
  • Pour your prepared pasta into the pans
  • Cover with aluminum foil (sprayed with cooking spray)
  • Cook above hot coals (about 3 inches above) for 10-12 minutes or until hot and bubbly.

S’More Nachos

S’More Nachos

Prep Time 5 minutes
Cook Time 10 minutes
Servings 4

Ingredients

  • Graham Crackers
  • Chocolate Chips
  • Mini Marshmallows
  • Regular Marshmallows

Instructions

  • Break the graham crackers into 1-2" pieces, and layer on the bottom of an 8×8 foil pan
  • Sprinkle mini marshmallows on graham crackers
  • Sprinkle chocolate chips on mini marshmallows
  • Repeat with another layer of all three ingredients
  • Add in a handful of regular size marshmallows
  • Cover with aluminum foil and place over the fire for 10 minutes
  • Be sure to closely monitor so that it doesn't burn! As soon as the marshmallows and chocolate is just start to melt, it is done!
